Zucchini Almond Bread



While searching to feed your family or kids, I find its always best to cook healthy wholesome foods.

Ingredients

  • 100g coconut flour or extra fine grated coconut
  • 1 packet vanilla baking powder( if you don't have the vanilla baking powder packet use 2 tsp baking powder and 1/2 tsp vanilla)
  • 50g powdered almonds or grated almonds
  • 260g grated zucchini
  • 100 g honey ( if you really like the honey flavor you can go up to 150g honey)
  • 3 eggs

In a mixer mix the coconut, baking powder and almonds

Pour dry ingredients into the bowl.
Mix the zucchini





Add zucchini to the dry ingredients. Mix and add the eggs, and honey.
Using a sifter or just by hand pour out the liquid that has accumulated in the mixing bowl. Careful not to make the mixture dry. We want it nice and moist but there is an accumulation of liquid from the wet ingredients that isn't useful while baking.
Mix well and cook at 160 celcius for 30-40 mins
If your not allergic to butter or flour butter and flour the baking pan before placing the mixture in.
You will know it is done when it turns golden brown around the edges and top and starts to come away from the sides of the pan
